2014 DP Brut

Spark­ling wine

It shows pale to me­dium golden col­our, while bubbles are tiny rather nu­mer­ous.

Ter­tiary, de­cent ma­ture aromas are dom­in­ant, re­min­is­cent of toast, bread­crust, dried pears, dried apples even mush­rooms. Fine and com­plex.

On the pal­ate we are con­fron­ted with a nice bal­an­cing play of pier­cing acid­ity and off-​dry dosage. Vi­brant, lively. Not suit­able for every­one’s pal­ate, but spark­ling wine lov­ers will adore it. Mousse is del­ic­ate, fla­vour in­tens­ity rather pro­nounced while very long fin­ish provides plenty of car­a­mel, roas­ted hazel­nuts and toast.

With plenty of el­eg­ance and char­ac­ter, ma­ture style.

Though it has spent years on the lees this is still a great aper­itif, but will ac­com­pany greatly most of the dishes, es­pe­cially shell­fish, fish, lob­ster, sal­mon, trout, sushi …

  • Chardonnay: 65 %
  • Pinot Noir: 35 %

No doubt vin­tage 2014 was the most chal­len­ging in last 30 years. Rainy and rather cool Au­gust and Septem­ber caused great dif­fi­culties in pre­serving the health of the fruit and sugar ripe­ness. With great care, rig­or­ous se­lec­tion and with the aid of new op­tical sort­ing table we man­aged to cre­ate ex­cel­lent bases for the spark­ling wines.

Va­j­gen

Clas­sic, bottle fer­men­ted, 96 months age­ing on the lees.

  • Alcohol content: 11,50 % vol.
  • Acidity: 8,49 g/l
  • Residual sugar content: 9,5 g/l
  • Closure type: Cork

It is per­fect now but will be in per­fect shape for at least five more years.  Drink 2025-2030.
