Sparkling wine
It shows pale to medium golden colour, while bubbles are tiny rather numerous.
Tertiary, decent mature aromas are dominant, reminiscent of toast, breadcrust, dried pears, dried apples even mushrooms. Fine and complex.
On the palate we are confronted with a nice balancing play of piercing acidity and off-dry dosage. Vibrant, lively. Not suitable for everyone’s palate, but sparkling wine lovers will adore it. Mousse is delicate, flavour intensity rather pronounced while very long finish provides plenty of caramel, roasted hazelnuts and toast.
With plenty of elegance and character, mature style.
Though it has spent years on the lees this is still a great aperitif, but will accompany greatly most of the dishes, especially shellfish, fish, lobster, salmon, trout, sushi …
No doubt vintage 2014 was the most challenging in last 30 years. Rainy and rather cool August and September caused great difficulties in preserving the health of the fruit and sugar ripeness. With great care, rigorous selection and with the aid of new optical sorting table we managed to create excellent bases for the sparkling wines.

Classic, bottle fermented, 96 months ageing on the lees.
It is perfect now but will be in perfect shape for at least five more years. Drink 2025-2030.
